                                                                     Mie Ayam Jamur Recipe
                                                                     (Chicken Noodle with Mushroom)
                                                                     for 3 servings

                                                                     Ingredients:

                                                                     200 grams     Egg noodles
                                                                     5 bunches     Mustard greens
                                                                     Toppings:

                                                                     200 grams     Chicken breast fillet
                                                                     200 grams     Button mushroom/champi-
                                                                     gnon
                                                                     4 cloves      Garlic
                                                                     6 tbs         Soy sauce
                                                                     2 tbs         Oyster sauce
                                                                     1 tsp         Salt
                                                                     ½ tsp         Sugar
                                                                     ½ tsp         Pepper
                                                                     2             Spring onions
                                                                     100 ml        Water
                                                                     As desired    Cooking oil

                                                                     Broth:
                                                                     300 grams     Chicken bones
                                                                     2 cloves      Garlic
                                                                     2 cm          Ginger
                                                                     2 tsp         Salt
                                                                     1 tsp         Sugar
                                                                     1 tsp         Pepper
                                                                     1             Spring onions
                                                                     1 liter       Water
                                                                     As desired    Cooking oil

                                                                     Steps to make the topping

                                                                     Heat the oil. Sauté garlics until it’s fragrant.
                                                                     Add the dice cut chicken. Stir until the color
                                                                     changes.
                                                                     Add the water and stir well.
                                                                     Add soy sauce, oyster sauce, salt, sugar and
                                                                     pepper. Stir well, wait until the chicken is well-
                                                                     cooked.
                                                                     Add champignons and sliced spring onions.
                                                                     Mix well, correct the taste. Turn off the heat.
                                                                     Steps to make the stock

                                                                     Heat the oil on a pan. Sauté the spring onions
                                                                     and gingers until fragrant.
                                                                     Add chicken bones and water. Stir well and let
                                                                     it boiled until the stock is out.
                                                                     Remove the bones, add salt, sugar and pepper
                                                                     to taste. Mix well and correct the taste.
                                                                     Add sliced onion springs then turn off the heat.
